Sautéed Swiss Chard

You know those beautiful red and green large chard leaves, the ones you pass up in the grocery store. Buy them next time they are delicious, and easy to prepare, after all the washing and rinsing . But it’s worth it, really!

Cut off the stems and wash and rinse separately from the leaves.

Add 2 tablespoons olive oil in pan, heat to shimmering, cut the chard stems 1-2inches pieces and sauté for about 5 minutes. Add two garlic cloves finely chopped to pan add the leaves and steam with cover on for 7 minutes.

In a large bowl squeeze the juice of one lemon, 1 tsp salt and fresh pepper

1 tsp paprika and two tsp cumin.

Strain the chard put it on a cutting board, slice and put in the bowl with the seasonings. Toss and voila. Sprinkle with a bit of olive oil right before serving. Delicious hot or at room temperature, Enjoy.
